From the moment you step into Pizzana, you can feel the passion and commitment to quality. But the magic truly begins with their signature "slow dough." Meticulously prepared and allowed to ferment for a full two days, this process yields a crust that is nothing short of extraordinary. Light and airy, remarkably easy to digest, yet possessing the perfect sturdiness to handle even the most generously topped slice with just one hand – it’s a testament to the art of patience in the kitchen.

During our recent visit, we had the pleasure of indulging in two of their standout pizzas, each a masterpiece in its own right. First up was the classic, yet elevated, Margherita al Crudo. Imagine this: a canvas of vibrant San Marzano DOP tomatoes, generously dotted with creamy fior di latte, all topped with delicate folds of prosciutto di Parma, a peppery scattering of fresh arugula, shavings of aged Parmigiano, and fragrant basil leaves. Every bite was a symphony of fresh, high-quality ingredients, a true celebration of Italian flavors.

But then came the Corbarina, and it was love at first sight (and bite!). This pizza is truly a feast for your eyes as well as your palate. Adorned with stunning squash blossoms – those delicate yellow-orange flowers that grow on zucchini – it’s a rare and ephemeral delight. Their fleeting lifespan makes them a true delicacy, seldom found on restaurant menus. However, thanks to Pizzana’s unwavering commitment to fresh, seasonal ingredients and their strong relationships with local farmers, they offer this treasure daily. Chef Daniele elevates this beauty with a cloud of creamy burrata, bursts of bright cherry tomatoes, and a vibrant housemade gremolata, infused with olive oil, garlic, herbs, a hint of Calabrian chili, and a touch of lemon. Tasting the Corbarina is like capturing the very essence of summer in a single bite – an absolute must-try.

While the pizzas undoubtedly steal the show, Pizzana’s culinary prowess extends beyond their signature pies. We also savored their comforting Pappardelle Alla Bolognese, a rich and hearty pasta dish that warmed us from the inside out. The Polpette al Forno (baked meatballs) were tender and flavorful, showcasing simple yet exceptional ingredients. To balance the richness, the crisp and refreshing Tricolore Salad offered a delightful counterpoint.

To complete our exceptional dining experience, we indulged in two beautifully crafted mocktails. The Scala Sunset was a vibrant and refreshing concoction, while the Vesuvian Blush offered a delicate and fruity sweetness. Both were the perfect accompaniments to our meal, showcasing the same attention to detail found in their food.
